Breton cider: An IGP since 2000 Cider is a drink made from macerated, pressed and fermented apples with a strength of between 2% vol. and 8% vol. of alcohol. It goes without saying that the best ciders (sweet, semi-dry or raw) are made in Brittany and that they delight the taste buds of Breton alcohol lovers. Breton cider has been protected by an IGP since 2000 which requires producers to use certain specific varieties of apples and to produce in a pre-established territory, in this case Brittany and part of the Pays de la Loire. How to taste cidre Cider is the result of the fermentation of a must resulting from the crushing of several varieties of cider apples. It has been mentioned since antiquity under various names (sicera, pomacium, vinum ex malis, etc.). The cider maker can modulate the quality of the cider through varietal choices, the quality of the fruit at harvest and during storage, and through several technological decisions during cidrification. All of these choices lead to varied organoleptic expressions, resulting from a chemical composition of sugar (fructose, glucose), ethanol, organic acid, polyphenols, aromatic compounds and CO2 (bubbles) presenting a certain diversity. .
